As spring weather approaches, so does the blossoming of flowers, sunny days, and walking outside sipping refreshing lemon water. It’s also a time to welcome the warmer seasons in a healthy way.
Salads, sandwiches, and smoothies are a staple spring meal. There are many different variations you can do to have a fun and unique meal all the time! These are perfect to enjoy on a picnic in the park, brunch on a Sunday, or getting together with family and friends.
Salads
Salads have been a staple for an easy and healthy lunch for a long time. It’s always fun to experiment and try new ingredients together to see what works well. Usually, it’s easy to start with a protein and build around that. Whether it’s chicken, shrimp, tofu or you just want a greens and grain salad, anything will be good in it. After deciding what salad you want to do, pick a dressing that goes well with your creation. Lemon based or oil and vinegar vinaigrettes are always a must! Add some seasoning and you got yourself a delicious salad!
There are many recipes you can follow if you don’t want to create your own. Salads like Mediterranean Chicken, Shrimp Avocado, Tofu and Watercress, and White Bean and Veggie are just a few examples to get your mind working. Here is a website to get started!
Sandwiches
Sandwiches come in many forms: the traditional two pieces of bread or the not-so-traditional tortilla wraps, pita bread and others. If you are on the go or in a rush, sandwiches are quick and easy to put together. They can also be enjoyed by the pool or sitting by the lake!
From crisp, cool deli-style sandwiches to warm, toasted paninis, there’s an option for any mood you are in. Some favorites to make are grilled chicken salad sandwiches, Caesar pitas, turkey wraps, and hummus and avocado wraps. Find even more recipes here!
Smoothies
A fresh and fruity smoothie can be a lifesaver, but it also has the chance of becoming a sugar-filled drink. It’s important to stay away from processed ingredients and to focus on fresh produce and vegetables.
Instead of adding oat or almond milk - which are high in sugar - go for plant-based milks like soy milk or Greek yogurt! Protein powder can also work as well with the smoothie base. Kale, beets, and spinach are excellent veggies to add in. When it comes to fruits, make sure you’re putting 1-2 servings of fruit for any smoothie. Fresh fruits are the best way to go, you want to avoid using fruit juice of any kind.
